One extra special protein pancake short-stack coming right up…

Protein Peanut Butter Blueberry Pancakes

Based off Janetha’s Protein Pancake Recipeserves 1.

Ingredients:

1/3 cup oats

1/3 cup cottage cheese

1/3 cup liquid egg whites

1/2 t vanilla extract

1/2 t cinnamon

1 T peanut butter protein powder

1 T PB2 powder

1/4 cup frozen blueberries

 

Directions:

1.  Blend all ingredients (minus blueberries) in a blender.  Add blueberries and stir.

2.  Pour over non-stick heated skillet.  Cook until bubbles form in pancakes, flip over, and continue cooking until both sides are golden brown.

1 of the pancakes needed more blueberries so I added them while cooking. can you guess which 1?

3.  Top with peanut butter frosting (optional – recipe below).

These bad boys clock in at about 272 calories, 32 g carbs, 4 g of fat, and 26 g of protein! 

 

Peanut Butter “Frosting”

Ingredients:

1 T PB2

1/4 cup plain greek yogurt

splash of unsweetened vanilla almond breeze

dash of cinnamon

Directions

1. Combine.  Enjoy.

The great thing about these pancakes is they can be customized in so many ways!  They would have been so good with bananas or nuts.  You could easily omit the protein powder and PB2 for plain pancakes.  Add in pumpkin and pumpkin spice instead!

 

I don’t have class today but I am going to buckle down and study for a Clinical test I have on Monday before work tonight.  I’ll get a nice break doing my LiveFit Day 46 Shoulders and later an 8 mile run with my friend Jordan. TGIF.
