Happy Hump Day!

Yesterday felt like Thursday to me but today…today feels like Wednesday.  I’ve been keeping busy with classes and the usual.

I also started Phase 2 of LiveFit trainer on Monday!  Phase 2 kicks it up a notch, as they say, with 6 days of weights and 4 days of 30 minutes of cardio included.  I’m going to try to modify this cardio to do 3 days of running for half marathon training.  I did legs today and ouf I can tell I am going to be feeling sore tomorrow!  Love it.

My eats have been pretty standard lately as I’ve been packing a lot of salads with quinoa and chicken for lunch, turkey muffins, almonds, hardboiled eggs, Ezekiel toast, and a plethora of other snacks for the day.  I did come up with this tasty twist the other night..

First start with roasted beets.  You can buy beets canned (I do) BUT they do not compare in taste to fresh roasted beets.  Roasting your own beets is so easy to do…just watch out for beet blood juice…

Roasted Beets

1. Preheat oven to 400° F.
2. Take fresh beets and wash/scrub under water.
2. Wrap in foil, place directly in oven, and bake about an hour.
3.  Remove from oven, let cool, and scrub skins off beets.  I’m sure you could ‘cut’ it off but I just use my fingers and get dirty.  This part gets messy so definitely do over a sink and don’t be afraid to use pressure to get them off!
4.  Cut or slice to use beets in salads and other meals.

Simple as that!  It just takes time for baking.

I decided to use some of my beets in an extra special salad.  I love cooked mushrooms but have never topped them on a salad before…it was a perfect savory combination to the sweet beets and fresh feta…

Roasted Beets and Mushroom Spinach Feta Salad

If you’ve cooked your beets already, the only prep you have to do for this salad is sauté 1/2-1 cup chopped crimini mushrooms in a non-stick pan.

Then Layer:

– Baby spinach
– Roasted beets
– Cooked crimini mushrooms
– 1/8 cup reduced-fat feta cheese
– 2 T sliced almonds
– 2 T balsamic vinegar

Oh beets..I love thee…

This salad was so good and would be great as a starter course if you are entertaining!  I could imagine following it up with a quinoa pilaf and roast chicken.

My brother-in-law claimed that only Dietitians liked beets, but I beg to differ!  Do you like beets?!
